Whole 30 – Day 4 – Easter!

I was extremely worried about today! When we all get together for a meal, there is lots of food and drink! Yikes!

Breakfast on a “big meal” day is with an RxBar and coffee because I like to keep things on the light side on a party day.

I prepped and cooked all morning for our Easter brunch, without tasting anything more than the fruit for the salad. Not too happy when I dropped a pie plan and it broke.

I have been reading up on sweet potato toast and thought I would give it a try. My mandolin didn’t make the slices thick enough, so I hand sliced them at about 1/2 inch thick. Then I tossed them in a dish and added evoo, salt and pepper then cooked them at 400 degrees for about 40 minutes on my Pampered Chef Stoneware. It’s a good idea to flip them over about halfway through the cooking time. After they were mostly cool, I topped them with my trational guac – avocado, lime, red onion, cilantro and red pepper flakes and finished them with sliced radishes. WOW! They were a big hit and compliant!

Brunch consisted of avocado sweet potato toast, leek and orange pepper egg bake, and fruit salad (cantalope, kiwi, strawberries and raspberries). I was very satisfied with these dishes. Also on the menu was egg bake with cheese (I didn’t miss the cheese), sausage (not an issue for me), french toast bake (yup – I would have loved that with some real maple syrup) and Gloria Ferrer Cuvee (that was a little bit of a killer!) My middle daughter brought chocolate covered pretzels for dessert and I sent them home with everyone. I want them out of the house, please and thank you.

My granddaughter ended up at the emergency room when she twisted her arm. She was diagnosed with Nursemaid’s Elbow – poor baby. The doctor fixed her right up and she was back playing in an hour; what an interesting Easter.

Dinner was a no brainer. I had leftover egg bake (no cheese) and avocado sweet potato toast – I’ll be making a lot of that, for sure!

Staying on plan made me happy, happy, happy!

Since I was faced all the tasty food, I was unsure how I would handle the chocolate, wine and french toast. Surprisingly, it was easier than I though.

My goal is to make a strong effort to be compliant for the next 30 days. Today I got the feeling that I could actually succeed!
